Butternut Squash Soup
Instructions

Peel the apple and cut into chunks.

Put in a large microwave bowl.

Add diced butternut squash, and the diced onion and sliced garlic.

Drizzle with olive oil and water.

Microwave until the veg is soft.

Heat the coconut milk in a small microwave covered bowl.

Put the soft and hot vegetables and the hot coconut milk in the blender with the orange juice, curry paste, sugar, and salt and pepper.

Blend and adjust to taste.
