Good Morning Christmas Granola
Instructions

Preheat oven to 275°.

Spray 2 baking sheets with Pam or something similar and line them with parchment paper or Silpat; set aside.

Combine brown sugar and water in a large Pyrex bowl (I use a 2-quart measuring cup). Stir together.

Heat in microwave on high for 3-5 minutes until sugar is completely dissolved.

Remove from microwave and add vanilla extract and salt. Stir until salt dissolves.

Place oats, nuts, seeds, coconut and cinnamon in a very large bowl and toss gently.

If the dried apples are moist and chewy, add those to the oats, also. If the apples are dry and crisp, leave them out until later.

Pour brown sugar syrup over the oat mixture and stir until thoroughly mixed.

Spread granola mixture onto the 2 prepared baking sheets and bake for about 20 minutes.

Pull granola out of the oven and stir.

Return to the oven for about 15-20 minutes.

When it is golden and crunchy, take it out.

Let granola cool until lukewarm.

Add dried fruit. Toss.

When cool, break up the granola and put into an airtight container or pack into bags and give as gifts.
