Dutchess' Potato Gratin with Boursin

Instructions

  1. Preheat oven to 400°.

  2. Butter a 9 x 13-inch baking dish with 2-inch high sides.

  3. Stir whipping cream and Boursin cheese in a heavy, large saucepan over medium heat until cheese melts and mixture is smooth.

  4. Generously season potatoes with salt and pepper.

  5. Pour remaining cheese mixture over potatoes in baking dish.

  6. Arrange ½ of sliced potatoes in baking dish.

  7. Bake until top is golden brown and potatoes are tender when pierced with knife, about 1 hour.
