Instructions

  1. In a wok or large frying pan, sauté carrots and onion in oil until tender, then add garlic and sauté until tender.

  2. Add diced ham and briefly sauté.

  3. Add cooked rice.

  4. Sauté rice with vegetables until uniformly mixed.

  5. Season with soy sauce, ginger, salt and pepper (start out using the least amount of the soy sauce and ginger and add more as needed, don't overdo the soy sauce).

  6. Put rice into a serving dish, cover to keep warm and set aside.

  7. Whisk 4 eggs together.

  8. Add a little oil to the frying pan and pour in the eggs.

  9. Add salt and pepper to taste.

  10. Cook eggs in a uniform layer (like an omelet), flipping once to brown lightly on both sides.

  11. Uncover the fried rice and slide the entire cooked egg omelet into the top of the fried rice.

  12. With a sharp knife, slice omelet into strips and then once again across into bite-size squares.

  13. Serve.
