Instructions

  1. In a large bowl, beat egg yolks with sugar, baking powder, salt, vanilla, oil, and water. Beat for 20 minutes.

  2. Add flour. Beat until well incorporated.

  3. Preheat oven to 375-400°. Grease bottom only of angel food cake pan. Cut parchment paper to fit, and place in bottom of cake pan.

  4. In a nonreactive bowl (not plastic), beat egg whites with cream of tartar until soft peaks form.

  5. Fold egg whites into egg yolk batter using a circular motion (folding in one direction only).

  6. Cook for 45 minutes or until done when tested with toothpick.

  7. Turn pan with cake in it upside down to cool.

  8. Slide knife gently around sides of cake pan to release cake.
