Instructions

  1. Combine the cream, sugar, chocolate and syrup in a heavy saucepan.

  2. Cook to the soft ball stage, washing the sides of the pan down often with a pastry brush dipped in water (this prevents the sugar from crystallizing).

  3. Pour on a marble slab to cool.

  4. At this time, add the butter, vanilla and salt to melt into the fondant while it is cooling.

  5. Beat the fondant with a wooden spoon until it loses its gloss.

  6. Add chopped nuts now if you desire.

  7. Knead the candy until it is fairly cool.
