Pita Bread
Instructions

In mixing bowl, dissolve yeast in warm water.

Stir in 2 cups of flour and salt. Beat 50 vigorous strokes.

Add remaining flour, 1/2 cup at a time, until a rough shaggy mass is formed.

Turn onto lightly floured surface. Knead until dough is soft and satiny (knead about 8 minutes or 6 minutes with mixer w/dough hook).

Divide dough into 6 pieces. Form each into a round ball.

Flatten with a rolling pin. Circles should be 4-5 inches in diameter and 1/4" thick.

Let rise for about 45 min., or until dough is slightly puffed.

Preheat oven to 500°.

Turn rounds upside down onto baking sheet. Bake for about 15 min., or until bread is light brown and puffed in the middle.

Cool.
